Jackfruit is a large (up to 30kg in weight) fruit, that today grows in most tropical places.
Jackfruit is a base ingredient in many Asian countries, especially in Sri Lanka. Also very popular in India.
Texture of the jackfruit is tender, similar to chicken in some ways. Since the green jackfruit is picked before it becomes sweet, it is suitable for vegetarians as a substitute for meat.
In the cooking process texture becomes similar to pulled meat. Since it does not have its own flavour, it is an ideal flavour absorber and carrier.
Try it in curries, salads, as a hamburger filling, breaded, fried etc.
Idea: marinade (choose your flavour ex. smokey, pepper) the jackfruit pieces for ca 20 min. Woks on a low heat for 15 min, at the same time gently pulling the pieces apart with forks to get a fiber like texture. When jackfruit is cooked, serve in a wrap or salads.
Ingredients: green jackfruit 60%, water, salt, acidity regulator: citric acid.
