Yuzu Lemon – mixed flavours of lemon, mandarin and grapefruit, light and refreshing, with floral notes.
Yuzu juice is perfect for seasoning fish, fish dishes, soups, marinades, salad dressings, beverages, ice-cream and sorbets, cake dishes, etc.
Yuzu is used also to made a spice paste called yuzu kosho – aromatic and spicy citrus flavoured paste, what can be used for seasoning many foods. Yuzu flavour cuts down the fatty taste of the meat and also gives a dept of flavour to desserts.
To make Yuzu kosho:
2 tbsp Yuzu juice,
2 tsp of fresh lime juice,
2 tbsp grapefruit juice,
230 g finely grated lime zest ,
2 tbsp finely grated lemon zest,
2 tbsp finely grated grapefruit zest,
1 birds eye chilli,
1 tsp salt, pinch of sugar.
Combine the grated peels, salt and chop with knife until a grany paste forms. Pour info tbowl and add other ingredients, mix well, let it set in refrigerator for 2 days.
Store in a glass jar, in refrigerator, for up to 2 weeks.
