Description
Piripirisås is a classic chili sauce from Portugal, made from Malagueta chili which is a small green chili fruit (4 cm) that gets an intense red color when it is ripe. Piripiris sauce is often used in Portugal as a table spice or as a marinade for grilled chicken / lamb racks. The piripiris sauce is perfect when you want a background heat in its cooking, as in pots, sauces, marinades, dressings or drip sauce on your pizza, hamburger or kebab. Malagueta chili has 60,000 – 100,000 on Scoville scale (medium)
Chicken Piri-piri
Take 4 chicken legs and cut slots in them so the flavors penetrate and the cooking goes faster.
Marinate the clubs for 10 min with Piripiris sauce and some olive oil.
Fry the chicken for 3 minutes with the skin side down in a hot grill pan until it has a nice color.
Turn and fry on the other side and simultaneously squeeze some fresh lemon juice over the chicken.
Serve the chicken steak together with a fresh salad and a good bread.
