Mace is the orange / red lacy coating (called the aril) that encases the nutmeg seed.
Unlike nutmeg, mace has a sweeter and softer taste.
Use mace for seasoning both salty and sweet dishes, especially popular in Asian, Caribbean, Indian and Moroccan cuisine.
Use it for seasoning potatoes, eggs, cheese dishes. For cakes, puddings and compotes.
