Description
Lecite is a soy-based emulsifier, ideal for making ‘airy dishes’.
Lecithin is used as an emulsifier in the chocolate industry worldwide. It can also be used as a carbonating and foaming agent. Lecithin has no dispersion problems in either hot or cold environments; neither acidic, salty nor sugary. In a fatty environment, it moisturizes very well, in fact it can create oil air if we preheat it to about 60 ° C.
Properties: refined powder; cold soluble; easily soluble in watery solutions – solubility decreases in oily solutions; for use in food preparation – limited use.
Recommended dosage: 5-8g / kg.
Ingredients: emulsifier: SOY lecithin (E322).
