Cumin is a herb with a strong aroma that has been used as seasoning for thousands of years. Very common in Indian, Mexican and Arabian cuisines.
Cumin is used for soups, vegetables, cheese, eggs, rice, meat, peanuts, pasta, marinades, bread etc.
Cumin is also one of the main components of the Middle Eastern spice mix of ras-el hanout, as well as curry powder, garam masala. In North Africa couscous is seasoned with cumin.
Also suitable for tea (250ml boiling water, 1 teaspoon cumin, let set for 10 minutes).
Roasting especially brings out the flavour and aroma of cumin. Seeds may be heated gently in oil to provide a milder flavor.
