Glicemul consists of monoglycerides derived from fats and made up of glycerin and fatty acids. Glicemul is suitable as an emulsifier, it enables an aqueous medium to be integrated into an oily medium. Glicemul is oil-like, which means it must first be dissolved in oil or fat before it can be added to a watery ingredient. The mixture of oil and Glicemul must be slowly added to water or watery ingredients so that emulsification can take place.

This texturizing agent helps to add texture to oils and Pure Pastes.
Insoluble in water.
Anti-caking agent in pastry doughs. Nougat stabilizer.
Suitable for use with oily preparations. It dissolves in oil when heated up tp 60°C. For proper mixing, dissolve slowly, leave to cool, then stir.
Recommended dose 30-60g/kg.
