Description
Ascorbic acid – vitamin C powder.
Used to prevent oxidisation of fruit or as a dough enhancer.
Also for sorbet, fruit crisps, mousse, sauces, juices, drinks, foams and bread.
Prevents fruit salad from going brown and helps retain the colour of globe artichokes during preparation.
Recommended usage:
0.05g per litre as a preservative in juice drinks
3%-5% as an antioxidant wash for fruit vegetables.
